Beaten Rice/Avalakki/Thick Poha Salad

I love Poha! Highly recommended if you crave for a bowl of rice and are on a weight loss journey. Poha is considered to be healthy because it is rich in fiber & iron and is a good source of carbohydrates. To top it all, it is gluten free!

This vegan recipe is made without use of gas and the result is simply drool worthy!!

Here's the recipe...

INGREDIENTS

  1. 2 cups Poha

  2. 3 medium tomatoes

  3. 2 cucumbers

  4. 1 cup Freshly chopped coriander leaves

  5. 1/2 cup finely chopped fresh Spinach leaves

  6. 1/2 cup chopped Rocca leaves

  7. 1 carrot

  8. 2 chilies finely chopped

  9. 8-10 curry leaves finely chopped

  10. 1/2 to 1tsp salt

  11. 1tsp mustard flakes (yellow mustard) or freshly pounded mustard seeds

  12. 3-4 tbsp fresh Lemon Juice (Adjust as per sourness)

  13. 2-3 tbsp Olive oil or any oil of choice

METHOD

  1. Put the Poha into a big sieve. Wash it under running water for about 30 seconds lightly tossing it with your fingers to make sure it is evenly washed. Avoid using a spatula or spoon as it might mash the Poha. Set it aside for at least 20 mins on a plate so the excess water drains off and the Poha dries off a little.

  2. Chop the tomatoes, cucumbers and carrots into small pieces and toss them into a big bowl.

  3. Add the remaining ingredients to the vegetables and mix well.

  4. Then add the Poha to the mixture and toss it lightly with a spatula. Make sure the Poha doesn't become too mushy.

  5. Serve and enjoy this healthy version of Poha. Enjoy this with my Spinach Cilantro chutney recipe!

NOTES

  1. This recipe uses the thick variety of poha/beaten rice. The thin variety cannot be used.

  2. You can increase or reduce the quantity of Poha as per your preference. If you use more Poha your salad might dry out. If that happens add more tomatoes and cucumber to it.

  3. I add very little salt, because I use Spinach.
